I have asked to have the country changed to Canada in my personal info. I cannot change it, and would like to have it accurate

Your ward clerk is probably the best person to ask about that. Another option would be to use the Feedback button or link on a page near where you would try to change it.

Mission and country of birth can both be changed by the ward clerk.
