Correcting member records ?
New clerk here -- How do I modify records to reflect new phone numbers, e-mails, or correct past mistakes in address, phone #, etc. showing in the current membership list?

Go to LCR, find the member profile (there are multiple ways but one is to select Membership > Member List and then find the member in the list) and then click on the pencil icon to the right of the information on the Individual tab. In general, if you need to edit something in LCR, look for the pencil icon.

If you have not received training from your stake clerk then you should contact him to get the requisite training.
But in the mean time try one of the two ways available to a clerk online to edit contact information.

- Log onto LDS.org and select Leader and Clerk Resources from the right hand column labeled "Tools and Support".
The list of tools and applications are available by clicking "My Account and Ward" where you sign first clicked to sign in. - Click "Membership" on the menu bar and select "Member List"
- Either scroll through the member list to find the member name or ...
Begin typing the member name in the search box. As you type a list of names matching your input will appear and you can select from that list. - Click the member name and then click the "View Member Profile" button from the pop-up.
- At the "Member Information" page click the edit icon (pencil graphic) on the right side of the page on the "Individual" tab.
You can edit the member record at this point. - Click the "Save" button to save your changes.
- Log onto LDS.org and select "Directory" from the middle "My Ward" column.
- With "Households" selected (the default selection) in the left pane navigate to the household for the member in the middle pane with the list of household names.
- Select the household name.
- Click the "Edit" button at the top of the right pane that displays the household information.
- Find the specific contact information either for the household or an individual and click the "Edit" link to edit that information.
If there isn't a phone number or an email address then click the "Add a phone number" or "Add an email" to make the change as needed.

Just so you're aware, in the case of emails and phone numbers, those can be changed by the member themselves. So, for those, you want to make sure you have current information and aren't trying to re-enter old information.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

I'm following the steps above, and I don't see the edit icon. I've verified that I'm logged into LCR. I'm the stake clerk. I can't even edit my own contact info. Ideas?

I don't know as stake clerks have the rights to edit membership records. Ward clerks would have that right.
All (or at least all adult) members can edit their own contact information in lds.org/directory.
