We have a couple in our ward who have a home in St. George, UT and also one in South Jordan, UT. They consider their ward in St. George to be their home ward and only come to South Jordan for part of the year.
They have indicated that the months that they are in South Jordan they would like to participate in Home & Visiting teaching, but do not want their records pulled from St. George. Can I create temporary membership records for them so they will show up on the roles and in HT & VT in the South Jordan ward?
Temporary Membership Records when they have (2) homes?

I believe if you check the manuals, it indicates that the records should be moved if they expect to be in your ward for 3 months or more. While 3 months is the general rule, Handbook 1, 13.6.4 covers the situation in question here, so the membership record situation is okay.
I do not have enough experience to know if a temporary record will interface with the HT/VT portion of MLS, but you could either go ahead and try it, or wait until someone comes along and shares the answer from personal knowledge. If it doesn't work, I would just put their assigned families under a member of the presidency or group leadership and let them do the visiting on behalf of the leader.

Members with an out of unit membership record can be listed in MLS as home teachers or to be home taught. They can also be listed on class rolls.
Questions that can benefit the larger community should be asked in a public forum, not a private message.

Temporary Membership Records
We had a very similar situation in our ward. The conclusion was that the records are transferred with the member, even though they had desired the record remain in our ward.
I would suggest a quick review of Handbook 1. 13.6.4
You should also keep in mind, members should not dictate what is done with the record. The record is not theirs, it belongs to the church and should be transferred according to policy
