1. It seems all new Membership Records (i.e. move in, infant blessing, adult baptism) are automatically assigned to Primary and the Gosple Essentials [Sunday School] Class. How can this be avoided?
2. After removing a member from both Primary and the Gosple Essentials [Sunday School] Class, as noted in #1 above, I clicked the "Reset Organization For Member" link in the Individual Record screen/tab [Ctrl+I]. The person was put back in the Gosple Essentials [Sunday School] Class, albeit not Primary. Can the Reset be defined?

What class in Primary? Both the class in Primary and the Gospel Essentials class do not have the class rules, such as age, set up correctly. Follow the procedures in "Changing class rules" to correctly set the membership rules for the classes.

It sounds like the rules for your classes are messed up. Anytime a new member moves in, they are automatically placed in any class(es) that apply. If the age rules are not set, then that includes everyone. See the link in JD's post for how to fix that.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

Although I completed the procedures in "Changing class rules", which should fix the Primary classes, I offer the following observations:
1. Instructors were not transfered from one class to the other, only students, so I had to look up that information after deleting the original class. It would be nice is the instructions identified this ramification, or the procedure asked for instructors.
2. The Gospel Essentials class membership is not based [only] on age, Priesthood or marital status. These tend to be adults who want to learn the basics. Whereas I did not see an option to designate "do not automatically add new members to this class", it seems best to simply use the Gospel Doctrine roll, rather than create specialty-adult classes (e.g. Gospel Essentials and Temple Preparation)?

The next section of the Wiki covered that:
"Especially in Sunday School, it is common to have specialty classes such as Family History, Gospel Principles, Marriage and Family Relations, or Teaching the Gospel. Such classes do not have membership rules based on age or gender.
For such classes, consider setting the rules such that no one will fit the rules (for example, set the minimum age to 200). That way no one will be added to the class automatically when they move into the ward, but you can still add members to the class manually."
It would be nicer if the GUI suggested something more intuitive, but we work with what we've been given.
