I need to create a daily event which occurs Monday through Friday (early morning class). The only option for daily events, does not allow for excluding days of the week.
Repeating events need an option to select by day of the week.

While not intuitive, have you tried "Weekly"? In there you can select multiple days. I think it will do what you want without creating 5 weekly events for each day.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.
