Does a Stake Service mission get listed on a membership record?

Not that I've seen. I think the only mission that's recorded is a full-time mission typically done in the 18-19 year old range.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

From MLS help:

"A member must be set apart for a full-time proselyting mission or temple mission before you record it as a full-time mission." With the caveat that missions for those serving from the United States and Canada are recorded by the Missionary Department, not by the ward.
