I have a member in our ward whose end of the year donor statement did not show any of his online donations. When he looked at it online, it showed that they went to the "Salt Lake City C.O.B." He was wondering if it was because of disciplinary actions that have been taken. Is this something that can be changed or do I just need to tell him that we won't have a summary of his deposits?

What was the discipline? Excommunicated members can't pay tithing. (See Handbook 1: 6.9.3.)
Check to see if the member's LDS Account has a MRN attached to it. If not, then that explains the problem. The church isn't aware that this is a member.
Also check "how" the donation was made. Everything done using the on-line donation page should show up in a member's account at the ward level (if the correct MRN is attached to the account). But some of the early setups for Bill Pay did NOT share that information with the ward. For some, that was a feature, not a problem.
