We've recently called a non-member to be the primary pianist (yes, it's approved in the handbook). How can I add her to show her in this calling? Since she's a non-member, she doesn't show up with I look for a person. Her family are members, so she is shown in the family group, but it won't let me select her to put her in a calling.

I don't think there's any way you can. You can't add non-members to the system, and I don't think the callings allow free-form name entry.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.
