Since MLS is not currently supported in Windows 10, you need to prevent an accidental upgrade - or to stop a overeager clerk.
Both of these tricks require editing the registry. (Not hard, but something that should be done with caution.) In both cases, you're probably creating new keys.
To prevent the upgrade:
Subkey: HKLM\SOFTWARE\Policies\Microsoft\Windows\WindowsUpdate
DWORD value: DisableOSUpgrade = 1
To disable the Windows 10 "nag" icon: (It won't take effect until you reboot.)
Subkey: HKLM\Software\Policies\Microsoft\Windows\Gwx
DWORD value: DisableGwx = 1

As per Meetinghouse policy, if the Clerk computer is behind the firewall and the Endpoint Manager is installed, then W10 shouldn't be available and shouldn't nag. But as you mention an overeager clerk might take it upon himself to do the W10 installation, without realising the consequences.
I've just checked my Clerk computer and the W10 upgrade files have been downloaded, in the background, but no nag as the computer has already been locked down by the Church software.

But nevertheless W10 has been downloaded in the background, but isn't visible to those who don't know how to find it.

To make it easier, here's a file that will do the registry changes for you. To use it, download it, rename the .txt to .reg, then double-click on it.
Since it's a text file, you can read it to verify what it does.
A couple of notes: To rename the file, you have to have Windows configured to show you the file extension. To "install" it, you must be logged in as someone with Administrator rights. I believe it will work on all Windows machines, church or non-church.
To reverse the effect, you can either manually delete the keys, use Regedit to or change the "1" to a "0", or edit the file to change the "1'" to a "0" and re-load the edited file.
