I would like to create some custom reports that include the additional "User Definable Field", but I can't figure out how to enter information into that field or have it function in a report. Can anyone give me some advice about using this feature?

I'm not sure how up-to-date this is, but it should give you a start: Custom fields (MLS)
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.
