Full time missionaries on the potential home teachers list
How do I keep full time missionaries from my ward from appearing on the "Unassigned Potential Home Teachers" list?

I don't think there is a way.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.

If you have an even number, you might assign them to home teach each other.

Interesting idea. But an even number is not required, since you can have a companionship with an odd number of companions, or you could have a cycle (for example with 3) of A teaches B, B teaches C, C teaches A. Or you could assign the missionary's father as his home teacher, or the ward mission leader.
