Login / Logout Options questions

I have noticed a variety of login and logout options on machines in the Stake.
One wants you to do "Control + Alt + Delete" to go any further, some simply come up with the pick an icon to login and other want you to enter the login name then password to login.
What method is most common on Church machines? I usually get the enter a login name then password option.
In the case of the "Control + Alt + Delete" option since the screen tells you to do this what use is it, since you can see how to make it the next step in loggin in.
When you log out typically you get a variety of options as well.
Most are: (with at dropdown menu to select)
Log Off, Shut Down, Restart
Some have:
Log Off, Shut Down, Restart, Stand By
One has:
Log Off, Shut Down, Restart, Hibernate (select by clicking icon)
They are all Win XP Professional Service Pack 3, so why all the different options and where do you set these preferences?
