Tax Amount on Checks
if I make out a check to a company for the exact amount that an item will cost. I don't include the tax amount because it is not known. The buyer brings back a receipt that shows the tax amount. How do I enter that tax amount into the system?

You can't edit the check to do this, but you can record the tax. See the answer in the thread: A taxing question
