Can I change callings around on LDS.org? I'm assuming it can only be done at my church building using the MLS but I wanted to be sure.

Currently it can only be done on MLS (in the clerk's office) but in the future you'll be able to do it online.

It's tough to say, but I would think months, not years.

The last schedule we saw of the beta plans (see here) showed beta implementation of callings features around September 2013, but with large disclaimers about the changeability of implementation plans. Obviously that date has passed, and no updated schedule has been posted. But still, it was a fairly high priority when those plans were published, so even if it got delayed a bit, I have to think it's not too far in the future.

There is a beta planned starting in a couple of weeks. See here. I do not know if it includes calling editing or not.
