Someone would have to check the Handbook, but the Policies and Guidelines For Computers Used by Clerks for Church Record Keeping seems to imply just one STS. An assistant stake clerk (or the stake clerk) may be assigned to be the stake technology specialist. Where I have seen more than one STS, one of them has been designated to lead the effort and the others have been assigned to support him.
I have most often seen more than one STS in geographically large stakes and, for convenience, one was the STS and the others were called assistant STSs. They were all assistant stake clerks, however, and some (but not all) had additional responsibilities besides technology.
