Donations in Kind

Is there a way to get a year-end statement for all the donations in kind (or included with the on-line cash donations) or are the individual letters sent with each donation receipt the only records available?

I have little experience with donations in kind. If they're not already on your on-line donation receipt at lds.org/donations, along with your ward donations, then I tend to doubt if they'll ever show up there.
Note that your LDS Account has to be associated with your membership number before it will work.

No. The Donations-in-Kind office should have sent out a donation receipt for each donation in kind. Those will be the only receipts you will receive.
The Donation-in-Kind system is not tied into the regular donation system at all, sorry.
