Is there a place where I can create custom reports in LCR and/or lists for use by the leadership in the stake? I am sure that there is; but, as of now I keep diving back into MLS to get birthday lists, custom age group lists, etc.

Currently there are no custom reports in LCR. However, I'd imagine there should be some standard reports to handle some of the items you mentioned.
Have you searched the Help Center? Try doing a Google search and adding "site:churchofjesuschrist.org/help" to the search criteria.
