Using the Directory on LDS.org, you can use the Print button to access the printing capabilities. Then if you uncheck all the boxes except for Phone Number and choose 6 columns, you will get a fairly compact format. For all the wards in my stake, the resulting phone directory will fit on a single piece of paper if you print it double-sided.

This is a great option for the ward. How about printing out the entire stake?

There is no single print method for the entire stake. You have to print the wards one at a time.
