From the menu in LCR select Finance > Participants, search for the Payee and click on the name. However, for members you can't edit most of the payee information--it comes from the membership record. For non-member payees you should be able to edit the name and address.

Look at the Family tab for the mother and father. If the child shows up in either place then they have been entered as a child on a parent's record but do not have a membership record. A clerk should be able to edit the email address on the membership record and that should then transfer to LDS Account which might make it possible to recover by email. Yes, just find the household or individual, press on the 'pencil in red circle' icon in the lower right and then select the Privacy tab. At least that's where it is on Android. I expect iOS is very similar.
